    Masala Paratha :

    Ingredients
    1 cup wheat flour
    1/2 cup any other available flour (rice, bajra, maize, etc.)
    1 onion
    1 carrot
    3-4 cabbage leaves
    1 capsicum
    1 potato
    4 green chillies
    1/2 tsp. ginger grated
    5 tbsp. oil
    1/4 tsp. turmeric powder
    salt to taste

    Method
    1. Finely chop all the vegetables either in a chopper or by hand in a large plate.
    2. You may even grate them if a chopper is not available.
    3. Add the flours, 2 tbsp. oil, salt and knead to a very stiff dough.
    4. Do not keep the dough for long after kneading, or it will become gooey and soft.
    5. This would make it difficult to roll the parathas.
    6. Divide into 3 parts. Roll into 5" rounds.
    7. Shallow fry on a hot griddle (tawa) on both till golden brown using the remaining oil.
    8. Eat hot or carry away for later, with sauce, tamarind or onion chutney.

    Making time: 20 minutes
    Makes: 3 parathas

      Tomato onion Parathas:
      Ingredients
      For the dough :
      1 Cup Of Plain Flour (Atta)
      1 Tbsp. Oil
      Water for kneading

      For filling :
      1/2 cup tomato finely chopped
      1 cup onions finely chopped
      1 tbsp. coriander finely chopped
      1 tsp. red chili powder
      1/2 tsp. cumin powder
      Salt according to taste
      Oil / Clarified butter for making the parantha
      Method
      1.Knead the flour as stated.
      2.Mix Onion & tomato with all the other dry ingredients together.
      3.Roll out the dough into small puris & spread some of the Onion tomato filling over it.
      4.Make a tight Swiss roll. Press together and reroll to full size parantha.
      5.Now cook on a tava (griddle) with Ghee (clarified butter) until light brown and serve hot. Both separately into thin chappatis.

      Serve with
      Serve hot and crisp with chutney.

        Kheema Paratha
        Ingredients
        For the dough :
        3 cups of wheat flour
        2 tbsp. ghee
        1/2 tsp. salt

        For filling:
        200gms of minced mutton
        1 small onion finely chopped
        1 tsp. each of grated ginger & garlic
        2 finely chopped green chilies
        1 tsp. coriander powder
        1 tsp. garam masala
        1/2 tsp. chili powder
        A pinch of turmeric
        2 tbsp. oil
        A handful of chopped coriander leaves
        Ghee (clarified butter) / Clarified butter for making the parantha
        Salt according to taste
        Method

        For the dough :
        1. Mix the wheat flour with salt, water and knead to a smooth dough. Keep it aside for 10 minutes.
        2.Then make small balls from the dough and keep it aside.

        For filling:
        3.Boil the minced mutton in salted water until it is tender.
        4.Now heat the oil in a pan, add onions and fry until brown. Also add grated ginger-garlic, salt, turmeric, chili powder, coriander powder, garam masala, boiled mutton and fry till the water dries and the oil separates.
        5.Add the chopped coriander leaves and remove from the heat. Keep it aside.

        To proceed:
        6.Take the dough balls and roll out each ball into a thin disc or a chapati and in the middle, place the filling mixture on one round chapati and cover with a another
        7.round chapati and seal the edges.
        8.Now sprinkle a little dry flour on top, then roll the paratha to a thin round shape chapati. Take care it should not break while rolling it out.
        9.Grease your tava OR griddle with Ghee (clarified butter) and place the paratha over it and when the base turns slightly golden color, apply Ghee (clarified butter) on the top and turn the paratha on the other side.
        10.Fry these parathas on both sides, pressing gently and keep turning the paratha until it turns golden brown. Serve hot.

              Chalein jab PG ki picnic ho gi to sara khana yeh PG ki larkiyaan hi tayyar karein gi :p. Waisey jaldi jaldi serve karo mujhey bhook lagging :p
              tumharey bas mein agar ho to bhool jao mujhey
              tumhein bhulaney mein shayid mujhey zamana lagey

                  Egg Paratha

                  Yield: 6 paratha

                  Ingredients:

                  2 c Flour, whole wheat
                  1 ts hara dhanya
                  2 ts Salt
                  4 Eggs; boiled and mashed
                  Water to knead
                  2 tb Ghee
                  Ghee; for shallow frying
                  1/2 ts Pepper


                  Method:
                  1-Sift whole wheat flour in bowl with 1 tsp salt. Gradually add water, make a stiff flour. Cover with a damp cloth. Keep aside for 20 minutes.
                  2-Boil eggs and mash well. Add 1 tsp salt, pepper, hara dhanya and 1 tsp ghee or oil. Mix thoroughly. Knead the dough until smooth.
                  3-Divide into 8 equal parts and roll out each 4" diameter circle. Place 1 tbsp egg filling in the centre of each circle. Shape them into round balls again. Now roll out each ball on a floured board to a circle of 5" (13 cm) diameter. Rub a little ghee or oil on one side.
                  4-Heat a griddle, shallow fry each paratha with a little ghee or oil (flip and smear a little ghee on the other side with the back of a spoon). Cook until both sides turn golden brown, turning once or twice.

                      lekan aik saday parahtay ki recipe share karti houn :D:

                      Atta khud ghoundh laian is ki recipe main nay bata rahi :p


                      Attay ki rooti beelian ...(aata ghoundhnay kay foran bad rooti nahi banaian khuch dair usay reakhian pher banaian is say rooti/paratha acha banta hai )

                      rooti bail kay us kay andar ghee lagain (Oil nahi ghee....paratha ghee ka zaida acha banta hai oil ki nisbat)

                      rooti pay oil laga kay usay roll kar daian ..or pher is ka gool peerra bana laian ..........or pher isay doobara gool rooti ki taraha belian ........
                      andar jo ghee hoti hai na is say rooti soft banti hai ...

                      ab Tawwa garam karain achi taraha ....rooti dalaian ..aik side pak jaye pher dosri side paltain ...pher ghee lagain donoo sides pay ......jab pak jaian to utaar laian ..or chaai kay sath kahaian :lpop:
