      200g green gram, half boiled in water
      20g dry mango powder (amchur)
      15g black salt
      1/4 tsp pepper powder
      1 lemon
      2 small bunches coriander leaves
      2 tsp corn flour
      150g ghee or butter
      5 bread pieces
      Salt to taste

      Method:


      Soak the bread pieces in water for few seconds. Remove from water squeeze all water and mash into pieces.
      To the mashed potatoes, add the above bread pieces, salt, lemon juice and mix well. Keep aside.
      To the green gram, add 2 tbsp of ghee or butter and fry on slow flame. Also add dry mango powder, pepper powder, salt, chopped coriander leaves, black salt and fry well until it becomes a fine mixture.
      Take some of the potato mixture and make lemon size balls. Put each ball on your palm, press with other palm and place the green gram mix in the middle of the potato mixture ball.
      Close the edges and repeat the process for the remaining balls.
      Roll the balls in the corn flour and press the balls into oval shape by keeping in between your palms.
      Heat a flat pan and fry these cutlets on both sides by keeping ghee or butter until golden brown in color.
      Serve hot with tomato sauce or mint chutney.

        Kashmiri Dum Aloo

        Ingredients:

        For aloo:

        1 tbsp. cashews powdered coarsely
        1 tbsp. cream
        salt to taste

        For gravy:

        3 tomatoes pureed & strained
        1 capsicum finely chopped
        1 onions chopped in strips
        1/2 tsp. sugar
        1/2 tsp. turmeric powder
        1 tsp. red chilli powder
        salt to taste
        2 cardamoms
        2-3 cloves
        2-3 peppercorns
        1/2" piece cinnamon
        1 bayleaf
        1 1/2 cups water
        1/2 tbsp. chopped coriander
        2 tbsp. mustard (or other) oil
        Grind to a paste:
        2 onions
        1" piece ginger
        4-5 red kashmiri chillies
        8-10 mint leaves
        4-5 cloves garlic (optional)

        Method:

        For aloo:

        Peel and boil potatoes till semidone.
        Cool and core with a potato scooper.
        Mix raisins, potato scoopings, cashew, cream salt.
        Stuff into potato hollows. Keep aside.

        For gravy:

        Heat oil, add onions, stirfry till brown, drain, keep aside.
        Stirfry capsicum till done, drain, keep aside.
        Add whole spices, allow to splutter.
        Add paste to oil stir fry for 2-3 minutes.
        Add puree, masalas, simmer for 3-4 minutes.
        Add water,sugar, salt, bring to a boil, simmer for 5 minutes.
        To make dum

        Use a heavy copper or steel pot.
        Inside of copper vessel must be polished with tin.
        Grease inside with ghee or oil.
        Place the potatoes in it. Pour gravy over them.
        Sprinkle the onions and capsicums.
        Take a tablespoonful of ordinary chappati dough.
        Make a long rope of it. Place along the rim of container.
        Place a well fitting lid over the mouth and press.
        The dough between the edges of the container and lid, will seal it.
        Press any protruding dough over, to seal further.
        Another way is to place lid first, then seal both edges with dough together.
        Place over hot coals or in the oven on slow for 20-25 minutes.
        Break open seal just before serving.
        Garnish with chopped coriander.
        Serve hot with warm soft breads or kulchas or naans.

                                Chinese Potato


                                Ingredients:



                                3 potatoes, boiled, but firm
                                1 bunch spring onion, chopped into 1" pieces
                                1 tsp ginger, finely chopped
                                1 tsp garlic, finely chopped
                                1/2 tsp red chili, finely chopped (fresh or dried)
                                1/2 tsp sugar
                                1 tsp soya sauce
                                1 tsp tomato sauce
                                1 tbsp corn flour
                                1/4 cup water
                                2 tbsp oil
                                Salt to taste



                                Method:


                                Mix the corn flour and water. Keep aside. Peel and chop the potatoes into long thick chunks.
                                Heat oil in a wok or pan, add some potatoes at a time. Fry till light golden brown. Finish all potatoes similarly. Keep aside. Remove half the oil.
