    Barbecued Chicken


    2 tbs brown sauce
    4 tbs tomato ketchup
    1 tbs Worcestershire sauce
    1 tbs olive oil
    1 tbs Schwartz American Barbecue Seasoning Simply Shake Seasoning
    8 chicken drumsticks

    Blend all the ingredients except the chicken in a large bowl.
    Skin and score the chicken flesh and add the sauce. Stir well to coat.
    Place the chicken on the grill for 20-25 minutes, turning occasionally and basting with any remaining sauce until cooked throughout.

    Barbecue Chicken Drumsticks



    Mix together all the ingredients except the drumsticks in a large bowl.
    Score the flesh of the chicken and pour over the sauce.
    Place chicken on the grill for 20-30 minutes, turning and basting frequently until cooked throughout.

                  Barbecued Spicy Chicken Wings

                  Barbecued spicy chicken wings are really easy to make, and you eat them with your fingers. My favourite type of barbecue food! To save time I make the sauce for them the night before and keep it in the fridge until it's needed.

                  Serves: 6
                  Preparation: 10 minutes
                  Cooking time: 25 to 30 minutes
                  Ingredients
                  • 18 chicken wings
                  • Oil for cooking
                  For the sauce
                  • 9 fl oz (250ml) of cider vinegar
                  • 1 tablespoon of coarse sea salt
                  • 1 teaspoon of freshly ground black pepper
                  • ! teaspoon of paprika
                  • I small, roasted red pepper chopped
                  • freshly ground black pepper to taste
                  • 9 fl oz (60ml) of vegetable oil
                  • 2 tablespoons of Worcester sauce
                  • 2 tablespoons of lemon juice
                  • 1/2 teaspoon of dried chilli flakes
                  1. Place all of the ingredients into a blender and mix well together. Pour the sauce into a jug or bottle.
                  2. Rub the chicken wings with the oil and cook over a hot grill for about 10 to 15 minutes. Stir the sauce and drizzle it over the wings every few minutes.
                  3. Turn over and repeat for the other side. The sauce will separate and so will need stirring frequently prior to drizzling.
                  4. Serve your barbecued spicey chicken wings while they're hot.

                    BBQ Chicken Pizza





                    Ingredients:

                    1 (12 inch) pre-baked pizza crust
                    1 cup spicy barbecue sauce/chilli sauce
                    2 boneless chicken breast halves, cooked and cubed
                    1/2 cup chopped fresh coriander
                    1 cup sliced capsicum
                    1 cup chopped onion
                    1 cup cheddar cheese, shredded
                    1 cup mozzarella cheese, shredded
                    1 tsp crushed red chillies


                    Method:

                    Preheat the oven to 350 degrees F.

                    Place pizza crust on a baking tray and spread the crust with barbecue sauce.

                    Top with chicken, coriander, capsicum, onion, and both kinds of cheese.

                    Sprinkle the crushed chillies on top.

                    Bake in the preheated oven for 15 minutes or until the cheese is melted.

                      Grilled liver and Fried beef

                      Grilled liver


                      Ingredients:

                      1/2 kg liver
                      1 tsp ginger paste
                      1 tsp garlic paste
                      1/2 tsp coriander powder
                      1/2 tsp turmeric

                      1 tsp chilli powder
                      2 lemons
                      Salt to taste

                      Method:
                      • Make a paste of all the spices and lemon juice and marinate the liver in it for an hour.
                      • Put on skewers, brush with oil and grill on charcoal or gas flame.
                      • Or you can cook it in a wok by heating oil and adding the marinated liver pieces.
                      • Cook on medium flame, first covered and when the moisture starts to dry, stir frequently.
                      • Serve hot with naan or rice, sprinkling it with grated ginger and coriander.
                      Fried beef


                      Ingredients:

                      1/2 kg boneless meat
                      1/2 tsp all spice powder
                      2 tsp garlic paste
                      2 tsp ginger paste
                      2 green chillies, finely chopped
                      1/2 red chilli powder
                      1/2 tsp black pepper
                      Salt to taste

                      Method:
                      • Chop meat into tiny pieces, a quarter inch thick.
                      • Pound the pieces till they flatten slightly.
                      • Mix ginger, garlic, green chillies, black pepper and red chilli powder and salt.
                      • Rub mixture onto meat.
                      • Set aside for a couple of hours.
                      • Heat oil and put the meat in it cooking on medium flame, stirring occasionally.
                      • Cover and cook till the meat is tender.
                      • Remove the cover and increase the flame.
                      • Add all spice powder and cook till the meat is a bit crispy and done.
                      • Garnish with mint leaves and sprinkle lemon juice on the top.

                        Grilled Chopped Steak Burger




                        Ingredients:
                        1 1/2 lbs. ground sirloin

                        1/3 C. grated onion

                        1 t. Worcestershire sauce


                        1/4 t. Tabasco sauce

                        salt and freshly cracked black pepper

                        Onion rolls


                        Method:

                        In a bowl combine all ingredients and mix together lightly. Divide into 4 patties, about 3/4 inches thick.

                        Broil or grill over medium coals. Cook 5 - 7 minutes per side or desired doneness.

                        Serve on onion rolls with your desired toppings.

                          Chicken Chargha



                          Ingredients:



                          Method:
                          • Mix all the dry spices and grind them.
                          • Then add the yoghurt, ginger and garlic paste and salt.
                          • Mix well. In a deep bowl add the chicken and apply the mixture.
                          • Marinate for two hours.
                          • Heat butter or oil on a low flame and add the chicken.
                          • While cooking turn its side carefully.
                          • Cook for 30-45 minutes or until done.
                          • Serve hot with a garnishing of coriander leaves on top.
