    Fiesta Salad
    Cooking Time: 25 minutes

    Serves 4-6

    Ingredients:
    1 head iceberg lettuce
    3/4 cup corn chips, crushed
    2 cups cooked pinto beans
    1/2 cup Italian salad dressing
    1/4 pound sharp cheddar cheese, grated
    1 avocado sliced
    2 tomatoes, cut in wedges
    Chopped green chile
    olives (optional)


    Method:
    1. Tear crisp lettuce into a large bowl. Toss with beans, cheese,
    chile, and chips.
    2. Add dressing and toss lightly
    3. Garnish with avocado, tomato, and olives. Chill and serve as a
    main course.

    All American Potato Salad

    Cooking time: 20 Minutes

    Serves : 2

    Ingredients :

    1 cup mayonnaise
    2 tablespoons vinegar
    1-1/2 teaspoons salt
    1 teaspoon sugar
    1/4 teaspoon pepper
    2 pounds potatoes, cooked, peeled and cubed (about 4 cups)
    1 cup sliced celery
    1/2 cup chopped onion
    2 or 3 hard-cooked eggs, chopped

    Method :

    1-In a large bowl, stir together mayonnaise, vinegar, salt, sugar and pepper.
    2-Add potatoes, celery, onion and eggs; toss to coat well. Cover, refrigerate.

    Cabbage Salad

    Cooking time: As Required

    Serves : 6

    Ingredients :
    1 package (3 ounces) chicken-flavored ramen noodles
    1 head cabbage, chopped
    4 green onions, chopped
    1/2 cup slivered almonds, toasted
    2 teaspoons sesame seeds, toasted
    DRESSING:
    1/2 cup oil
    1 tablespoon cider vinegar
    Salt and pepper
    1/2 seasoning package from ramen noodles

    Method :

    1-Break up ramen noodles and add to cabbage. Stir in green onions, almonds and sesame seeds. 2-Combine all dressing ingredients. Thirty minutes before serving, add dressing to salad mixture.
    3-Mix well. Chill. Serves

    Comfort Salad

    Cooking time: 20 Minutes

    Serves : 6

    Ingredients :
    3 tablespoons olive oil or any favorite
    1 teaspoon salt
    1 tablespoon dried basil or 8 fresh leaves
    Dash of garlic
    Dash of cinnamon
    1 medium-size tomato, chopped
    1 small head of lettuce, chopped
    1 cup cooked rice
    1 cup shredded Cheddar cheese

    Method :

    1-In a large 2-quart bowl, place first five ingredients and mix.
    2-Add remaining salad ingredients. Mix well and serve.

      Creamy Corn Salad

      Cooking time: 25 Minutes

      Serves : 4

      Ingredients :
      1 can (15-1/4 ounces) whole-kernel corn, drained
      1 medium-size tomato, seeded and diced
      2 tablespoons chopped onion
      1/3 cup mayonnaise
      1/4 teaspoon dill weed, optional

      Method :

      1-In a small bowl, combine all ingredients; mix well. Cover and refrigerate until serving.
      2-Double the recipe if you're serving several.

      Frozen Cheese Salad

      Cooking time: 25 Minutes

      Serves : 6

      Ingredients :
      1 package (8 ounces) cream cheese
      1 can (4 ounces) crushed pineapple
      1 dozen marshmallows, cut up fine
      1/2 cup nuts
      1/2 cup maraschino cherries, cut fine
      1/2 cup cream, whipped
      3 tablespoons pineapple juice

      Method :

      1-Mix all the ingredients and freeze. Serve on lettuce.

        Hot Chicken Salad

        Cooking time: 40 Minutes

        Serves : 4

        Ingredients :
        4 chicken breasts, cooked and diced
        4 cups celery, slivered in 1-inch long pieces
        1/2 cup slivered almonds
        4 teaspoons grated onion
        1 teaspoon salt
        1 teaspoon Accent seasoning
        4 teaspoons lemon juice
        2 cups regular mayonnaise
        1 cup grated Velveeta cheese
        1-1/2 cups crushed potato chips

        Method :

        1-Toss all ingredients except cheese and potato chips. Pour into 3-quart baking dish (sprayed with Pam). Refrigerate overnight.
        2-Remove from refrigerator 30 minutes prior to baking.
        3-Sprinkle cheese and then potato chips on top.
        4-Bake at 400 degrees uncovered for 30 minutes.

        Greek Salad

        Cooking time: 35 Minutes

        Serves : 6

        Ingredients :
        1/2 cup olive oil
        1/4 cup red wine vinegar
        1/2 teaspoon salt
        1/2 teaspoon sugar
        1 teaspoon parsley
        1 teaspoon basil
        2 tomatoes, chopped
        1 can (6 ounces) large pitted ripe olives
        1/4 cup finely chopped onion
        1 head iceberg lettuce, wash, drain and let dry
        1/4 cup feta cheese

        Method :

        1-In a 3-cup glass measuring cup or bowl, combine the oil, red wine vinegar, salt, sugar, parsley and basil. Stir with a wire wisk until combined.
        2-Add the chopped tomatoes, whole olives and chopped onion. Let set at room temperature for about 2 hours before serving.
        3-Just before serving, cut or tear lettuce into bite-size pieces and place in large salad bowl.
        4-Pour dressing over the salad ingredients. Crumble feta cheese on top. Toss to combine and serve.
