الزعفران

زعفران ایک پودے، اسکے پھول اور پھول کے ایک حصے کا نام ہے۔ کیسر کی جڑ پیاز جیسی ہوتی ہے۔ اس کا پھول خوش نما ہوتا ہے۔ اس کے پھول کے کیسری رنگ کے حصے کا شمار دنیا کے سب سے قیمتی مصالحوں میں ہوتا ہے۔ یہ کھانوں کو خوبصورت اور ذائقے دار بناتا ہے اور یہ رنگنے میں بھی استعمال ہوتا ہے۔

کیسر (Kesar) کو عربی میں زعفران اور انگریزی میں Saffron کہتے ہیں۔ لفظ کیسر کشمیر سے آیا ہے جہاں اسکی کاشت عام اور کاروباری پیمانے پر ہوتی ہے اور اسکی وجہ سے وادی کشمیر اسکے رنگوں میں کھو جاتی ہے۔ کیسر پودے کے علاوہ انسانی نام کے طور پر بھی استعمال ہوتا ہے۔ کیسر ہمارے گیتوں اور محاوروں میں رچا ہوا ہے۔ پنجابی گیت: چنی کیسری تے گوٹے دیاں تاریاں اسکی عام مثال ہے۔

الزعفران

The cultivated saffron (saffron crocus C. sativus) flowers in the autumn and comes up every year, so it is known as a perennial plant. It does not grow wild, and is now a triploid form of the eastern Mediterranean plant called Crocus cartwrightianus.[8] It is thought that C. cartwrightianusCrete.[5] The saffron crocus resulted when C. cartwrightianus was subjected to extensive artificial selection by growers who desired elongated stigmas. It is sterile because the saffron crocus's purple flowers fail to produce useful seeds&mdash. This means that reproduction is dependent on human assistance. The corms (underground bulb-like starch-storing organs) must be manually dug up, broken apart, and planted again. After a period in summer known as "aestivation", some narrow green leaves come up from the ground. These can grow to up to 40 cm (15.74803148 in) in length. The number of leaves is between five and eleven. In autumn, purple buds appear. In October, after most other flowering plants have released their seeds, the saffron grows its brightly-coloured flowers, ranging from a light pastel shade of lilac to a darker and more striated mauve.[9] At the time of flowering, the plant is usually less than 30 cm (11.81102361 in) in height.[10] Inside each flower are three prongs, called the "style". Each prong has a crimson "stigma" of between 25 and 30 mm in length[8] at the end of it.
