Creamy Vegetable Soup (without the cream)
Ingredients:
1-2 potatoes
1 Onion
2 Carrots
1-2 Courgettes
1-2 Leaves of Chard, Spinach or Cabbage
1 tomato
A little vegetable oil or Olive oil
Salt and pepper to taste
Plenty of water to cover.
Cut vegetables into chunks and put all ingredients in a saucepan and boil until cooked (approx 20 minutes).
Puree in a blender or sieve.
Serve hot.
