      this is my first post after a long period of time.... i have been away from Pegham for sum reason.....so I'm back here again.....:)


      CHICKEN BIRYANI

      Ingredients:
      • 1 Whole Chicken (cut into large pieces)
      • 3 cups of Basmati Rice
      • 5 large Onions (thinly sliced)
      • A bunch of Mint Leaves (Podina) (chopped)
      • A bunch of Fresh Coriander/Cilantro Leaves (Hara Dhania) (chopped)
      • 1 tsp. Ginger Paste (Pisi Adrak)
      • 1 tsp. Garlic Paste (Pisa Lehsan)
      • 2 cups of Plain Yogurt
      • 3 tsp. Coriander Powder (Pisa Dhania)
      • 1 tsp. Turmeric Powder (Pisi Haldi)
      • 2 tsp. Red Chilli Powder (Pisi Lal Mirch)
      • 1 tsp. Cumin Powder (Pisa Zeera)
      • 5 Green Chillies (Hari Mirch) (more or less may be used depending on spice preferance)
      • 10 Cloves (Loung)
      • 6 small Cardamom Pods (Choti Ilaichi)
      • 2 Cinnamon Sticks (Dal Cheeni)
      • Lime Juice or Lemon Juice (to taste)
      • Salt (to taste)
      • A few strands of Saffron (Zafran) (optional)
      • 4 tbsp. Whole Milk (optional)
      • 20 Cashew Nuts (Kaajoo)
      • 20 Raisins (Kishmish)
      • 4 Eggs
      • Cooking Oil (for deep frying)

      Directions:

      1. Beat the plain yogurt well. Marinate chicken with the plain yogurt, ginger paste, garlic paste, turmeric powder, coriander powder, cumin powder, chilli powders, and salt. Let it marinate for about one hour.





      3. Clean and chop the mint leaves and coriander leaves. In the same oil, fry the chopped cashew nuts and raisins until golden brown, drain and set aside. Slit green chillies, and mix into the marinated chicken. Put chicken and marinade into a kadai or pot in which the onions and cashew nuts were fried. Add a little water, cover and cook until the chicken is half done. Remove the chicken pieces with a slotted spoon and measure the stock. Add enough water to make it six cups.


      4. Put the rice into a rice cooker, add the whole spices, arrange the chicken pieces on top, sprinkle three-quarters of the fried onions and all the chopped coriander/cilantro and mint leaves. Pour in the measured stock into which the garam masala powder has been added. Pour the remaining quarter cup of clarified butter or oil over the whole mixture. Cover and cook until well done.



      5. Meanwhile, hard-boil and shell the eggs. Soak the saffron in milk (if using it). When the biryani is done, open the rice cooker, and sprinkle the saffron-soaked milk on top. Mix carefully and cover and leave on very low heat for a few minutes.


      6. Just before serving, mix in the juice of half a lime or lemon. Arrange on a serving dish and garnish with the remaining fried onions, cashew nuts, raisins, and boiled eggs.

        In tamam cheezoo ko grinder main dal kr achi trha sey pees lain or phr small size k balls bana kr slow heat pr thorey sey oil main fry kr lain.

        FOR RICE
        Rice 3 cups
        1 piyaz slices
        2 taiz pata
        1tbsp ginger garlic paste
        Salt 3tsp( or as to taste)
        1 tomatioe sliced
        2 green chilies
        1/2 cup yogurt
        Kutti lal mirch 1/2 Tsp
        Zeera 1tsp
        Oil 1/2 Cup

        Oil garm krk us main piayz dal kr golden krlain phr ginger garlic dal kr khoob bhonian phr baqi ajzaa bhi shmail krk itna bhoonain k dahi or tomatoes ka pani dry hojayee. phr kofta dal kr ahista sey chamch chalayeaa after wards ek cup pani dal kr thora pakney rakh dain slow heat pr.
        jab pani almost dry honey ko hoo tu chawal ki munasibat sey pain dal kr namak shamil karain or aag taiz krdain jub pani dry honey k qarteeb ajayee tu pateeli ko tawey pr rakh kr dhak kr 20min dum laga dain.
        mazedar kofta pulao tayar hai raita sey paish karain.

          BIGHAREY CHAWAL

          Ingredients:
          1 1/2 c Rice -- Wash and soak 1 Hr.
          1 Lg Onion -- sliced thin
          3 Tbsp Ghee
          3 Cloves
          1 Inch Cinnamon Stick
          2 Tsp Salt
          3 c Water

          Serves 6

          Method:
          Heat ghee. Add onions and spices and satue until onions are tender but not brown. Drain rice and stir into onions. Cook until rice is transparent. Add water and boil until rice is tender. Serve hot.

            Channa Daal Khichiri


            Serves 3-4

            Ingredients:
            1 cup rice
            1/3 cup CHANA DAL
            1/2 cup sliced onion
            1/2 inch cinnamon stick
            2 cloves
            10-12 kali mirch
            Method:

            1-Rinse rice and Dal separately, then soak them in 2 1/2 cups of water for 20-25 minutes.
            2-Drain them well and put off to side. Slowly dry fry onions, in heavy saucepan.
            3-When they begin to add cinnamon, clove, cardamom, and kali mirch.
            4-If they stick, add a little water. Stir until onions are golden brown.
            5-Add 2 1/4 cups off water and put in dal first. Let it come to a boil, reduce heat to a minimum, 6-cover and cook 10 minutes, add drained rice, stirring gently to mix dal and and rice
            together.
            7-Cover and continue cooking for 20-25 minutes, let stand 3 or 4 minutes before serving.
