How To Cook Delicious Mantu in No Time:eye:
Learn How To Cook a Delicious Afghan Dish

You need the following ingredients and tools to cook a tasty mantu, the traditional Afghan dish, at your home.

    Ingredients
    1 cup white floor
    2 cups plain flour (maida)
2 tablespoons olive oil or vegetable oil
    Salt as preferred
    1 1/2 tablespoons rice flour
    Ground beef (one pound)
Ground pepper, ground cumin, ground coriander and dried mint as per taste
    5 cups fresh yogurt
    2 chopped onions
    2 garlic gloves
Tomato ketchup, vinegar as per taste

Prepare the dough (if you don't have the ready-made wonton wrappers). You can use wonton wrappers if you have them available but otherwise, prepare the mantu dough. To make mantu dough, take a bowl and mix flours, 2 tablespoons of oil and salt, and gradually add water until the dough holds together and kneads well. Make sure it is hard enough to be rolled out and then cover it with a moist cloth and let rest for 20 minutes. Then beat and knead the mantu dough again and cover it for 10 minutes more.
Prepare the filling for mantu. Put 2 tablespoons of oil into a skillet and add the ground meat. Add cumin, coriander, pepper and salt according to taste. Onion is optional (some people like to add onions while others don't). Add one cup of water (or as much water as you think can cook the meat) and cook it on medium heat for 25-30 minutes (when you see that meat is cooked and the water has been absorbed by the meat). Put aside to cool.
Break up pieces from the dough and roll it out in a circle shape. Cover the board with some flour to avoid the dough sticking to it and put the circles on it one at a time. Dip your fingers in water and wet the edges of the circle to make it a little sticky. Put one tablespoon of the beef mix cooked earlier on one half of the circle and bring the other half on top of it, making a triangular shape. Seal the edges by pressing and pinching to make a bow. (If you are using wrappers instead, fill them in the same fashion.) Dip the bottom of this mantu in oil and place it in the steam cooker. Make as many mantus as you like and then steam them for 30-40 minutes.
Take a mixer to make the yogurt mixture. Put yogurt, garlic, mint, 1 tablespoon water, 1 tablespoon vinegar (or as much as you like) and mix it completely.
Take a large flat dish and put a layer of the yogurt mix on it. Then put the mantus on top of the yogurt and put a light layer of ketchup and vinegar on it. Then put another layer of yogurt mix on it. Put some of the extra beef mix on top of it and feel free to add and decorate it with fresh green vegetables if you like.
Mantu is now ready to be served.
