Apricots and Nuts Truffles
Ingredients:

1 tin 397g
1/3 cup or 70g butter
cup or 35g cashew nuts, toasted and chopped
cup or 35g almonds, toasted and chopped
75g dates, finely chopped
200g dried apricots, finely chopped
1 cup or100g desiccated coconut
300g dark chocolate, melted
Preparation:

Add cashew nuts, almonds, dates, apricots and coconut to the cream mixture then mix thoroughly. Once the mixture cools, shape it into small equal size balls. Chill the balls in the freezer.
Dip the chilled balls in the melted chocolate and place them on a tray that is lined with waxed paper. Refrigerate the balls until set.

Store the balls in a plastic container in refrigerator.
