    Mixed Fruit Shake........



    500 grams cherry or strawberry yogurt


    2 oranges

    2 bananas ripe

    12 frozen strawberries

    14 cherries, frozen



    1.Peel the oranges, remove white pit and cut into segments. Peel and cut bananas into thick slices
    2.Place yogurt, oranges, banana, strawberries and cherries in blender. Blend in batches, until smooth
    3.Pour into tall glasses and serve
    4.Serve Cold & Immediately
    Serves 4 people

    Preparation time: 10 minutes
    Cooking Time: 10 minutes

      Pina Colada.........




      1 banana, peeled and sliced


      1 slice pineapple

      4-1/2 tbsp pineapple juice

      1 scoop of strawberry ice cream
      1-1/2 tbsp coconut powder


      • Roughly chop the banana.
      • Cut two small wedges from the pineapple for decoration and put it aside.
      • Cut the remaining pineapple into pieces and put it in the blender with the chopped banana.
      • Add pineapple juice and process until the mixture turns into a smooth paste.
      • Add strawberry ice-cream, coconut powder and a small scoop of finely crushed ice.
      • Process until the mixture gets smooth.
      • Pour the mixture into glasses and decorate each glass with a small wedge of pineapple and a cherry.
      • Serve immediately.

        Milk with Saffron.....




        2 tablespoons boiling water
        1/3 cup shelled pistachio nuts
        Seeds from 10 green cardamom

        5 cups cold milks
        Crushed ice




        • Put saffron and boiling water in a small bowl; soak 30 minutes
        • Put in a blender or food processor fitted with the metal blade
        • Add pistachio nuts, cardamom seeds and sugar
        • Process until smooth
        • Add milk and process until frothy
        • Half-fill glasses with ice and pour in frothy milk mixture
        • Sprinkle with chopped pistachio nuts and serve at once
        Serves 5 people
        Preparation time: 5 minutes
        Cooking Time: 5-10 minutes

          Tropical Fruit Punch.....


          1\2 cup sugar
          1\4 cup water
          2 cups grapefruit juice, fresh
          2 cups orange juice, fresh
          2 cups pineapple juice
          2 cups guava nectar
          1\4 cup lime juice
          some crushed ice
          To garnish - mint leaves and lime slices

          • Cook sugar and water in a small saucepan over low heat until sugar dissolves. Increase the heat and bring to boil. Simmer for 1 minute, remove from heat and keep aside to cool completely
          • Blend juices, nectars and syrup in a large pitcher. Chill thoroughly
          • Pour into tall ice filled glasses. Garnish with mint leaves and lime
          • Serve immediately

          Serves 3 people
          Preparation time: 10 minutes
          Cooking Time: 10 minutes.

            Banana Yogurt Milkshake.....




            4 ripe bananas
            1/3 cup brown sugar
            1 teaspoon cardamom seeds
            3-3/4 cups cold milk
            2/3 cup plain yogurt
            6 ice cubes

            • Peel and slice bananas; reserve a few slices for decoration
            • Put remainder in a blender or food processor fitted with the metal blade
            • Add sugar, cardamom seeds, milk, yogurt and ice cubes
            • Process until smooth and very frothy
            • Pour into tall glasses and decorate with reserved bananas slices
            • Serve at once, with straws
            Serves 5 people
            Preparation time: 5 minutes
            Cooking Time: 5 minutes

              Strawberry Juice......



              1 tsp tukh-malanga
              2 cups water
              1 cup strawberry juice
              Ice cubes, optional


              • Soak tukh-malanga in water for 30 minutes, till it doubles in size.
              • Mix strawberry juice and ice cubes.
              • Pour in a glass and serve.

              Jaggery Sherbet ......



              A medium piece of jaggery
              1 glass of water
              1/2 tsp lemon juice
              Ice cubes, as required


              • Soak the jaggery in water.
              • When it is dissolved, sieve and mix in lemon juice and ice cubes, and serve





              Lemon Sherbet.....



              1/2 kg lemons
              1/2 kg sugar
              1/2 litre water
              1 tsp vinegar


              • Wash and cut lemons into two pieces.
              • Squeeze juice from the lemons and store it.
              • Boil sugar and water to make syrup.
              • Cool the syrup and mix lemon juice and vinegar in it.
              • Store the mixture in a bottle. When serving mix three fourths glass of water with one fourth glass of syrup and add ice cubes.

                    Vanilla Milkshake.....




                    1 cup milk, chilled
                    2 1\2 cups vanilla ice cream
                    1 teaspoon vanilla essence
                    whip cream

                    • Place the vanilla ice cream and extract into a blender
                    • With the motor running, add the milk, until it is thoroughly mixed.
                    • Few hours before preparing the drink, put the empty glasses in the freezer. This will give them this frosty look, people would love ! Get the glasses from the freezer, put them on the serving tray
                    • Pour the shake into the glasses with a straw
                    • Spray whip cream, if desired
                    • Garnish with grated chocolate or maraschino cherries, strawberries, if desired
                    • Serve immediately
                    Serves 2 people
                    Preparation Time: 10 minutes

                      Kashmiri Tea (Chai).....


                      10 cups water
                      3 tbsp Kashmiri tea leaves

                      1 tsp salt
                      6 cardamoms crushed
                      Milk as desired
                      Sugar to taste
                      Few almonds and pistachios crushed


                      • Boil water for five minutes.
                      • Add tea leaves with soda and cook for 15 minutes.
                      • Add cardamoms.
                      • When water is reduced to half, add cold water of the same amount.
                      • Mix well till it turns pink in color.
                      • Cook again and add milk as desired.
                      • Serve with salt, sugar, almonds and pistachios.






                      Espresso Coffee....

                      4 tbsp milk powder


                      2 cups hot water

                      2 tsp coffee levelled
                      2 tbsp sugar


                      • Blend all the ingredients in a blender until foamy.
                      • Serve hot with some sprinkled coffee powder.






                      Cold Cofee.....




                      1 cup milk
                      1 tablespoon instant coffee
                      1 1\2 cups chocolate
                      For garnish - strawberries
                      Chocolate Ice cream (if desired)
                      Whip cream (if desired)

                      • Combine milk and instant coffee beverage mix in blender, blend until dissolved.
                      • Add ice cream as desired and blend until smooth
                      • Garnish with grated chocolate and cherries or strawberries. Whip cream could be used too.

                      Serves 2 people


                      Preparation Time: 10 minutes.

                        Mango Lassi.....




                        1 cup mango, diced
                        1/2 cup Orange juice (chilled)
                        3 tablespoons honey, pure
                        2 cup milk, rich (chilled)
                        1 pinch of rose petals (optional)

                        • Combine mango, orange juice & sweetener in food processor. Blend for 1 1/2 minutes
                        • Pour milk into processor & mix it until it has expanded & become frothy
                        • Add the mango puree. Process for about 1 minute
                        • Pour into chilled glasses
                        • Garnish with the rose petals if you want
                        • Serve Cold & Immediately.
                        Serves 4 people
                        Preparation Time: 5 minutes
                        Cooking Time: 5 minutes
                        Salty Lassi.....





                        2 cups plain yogurt
                        3 3/4 cups cold water
                        1 teaspoon salt
                        1 tablespoon mint leaves, shredded
                        1 tablespoon white cumin seeds, roasted and ground
                        Crushed ice, to serve


                        • Place the yogurt and water in an appropriate sized bowl and add the salt, mint and half of the ground cumin
                        • Whisk thoroughly until the top of the mixture is quite frothy; alternatively, use a blender
                        • Then chill the mixture
                        • Take 6 long glasses and drop in a generous quantity of crushed ice
                        • Then pour in the frothy mixture
                        • Sprinkle the remaining cumin on each serving
                        • You can also sprinkle, your choice of fruits (cut in very small pieces)
                        Serves 6 people
                        Preparation Time: 5 minutes
                        Cooking Time: 10 minutes


                        Yogurt Lassi.....
                        4 cups yogurt
                        1 cup milk
                        1 cup sugar
                        Crushed ice
                        • Place all the ingredients expect ice into blender and blend at high speed until well blended
                        • Add crushed ice to individual glasses, pour the prepared lassi on top and serve immediately
                        • Serve Cold & Immediately
                        Serves 2 people
                        Preparation Time: 5 minutes
                        Cooking Time: 4 minutes
