        Fried Fish:-
        Serves 4
        Ingredients:
        Raw fish filets
        Marinate:
        Salt according to taste
        2-3 tsp lemon juice
        1 tsp garlic paste
        1/2 tsp chili powder
        Batter for frying:
        4-5 tbs basin (channa powder)
        Salt according to taste
        1/2 tsp chili powder

        Method:
        Water to make paste (not too thick or thin)
        Coat the fish with the marinate and leave for 2-3 hours in fridge.
        Then dip in batter and deep fry till golden brown.

        Fried Fish with Lemon:-

        Cooking time: As Required

        Ingredients :
        4 pieces of fish
        1/2 cup lemon juice
        green chillies 5
        salt to taste
        ginger garlic paste 3 tab sp
        red chillies powder 1/2 tea sp

        Method:
        1-Add 1/2 cup lemon juice in a bowl then add pieces of fish in it after 2 hrs.
        2-Add salt ,ginger garlic paste ,green chillies paste ,red chillies powder and mix it after 30 min fry it

        Spicy Fish Fry:-

        Cooking time : 25 minutes

        Serves 2-4

        Ingredients:

        4 long fish fillets, cut into 2 pieces each.
        Rice flour for dusting.
        Blend into a smooth semi-dry paste:
        1/2 cup rice flour/raw rice
        1 small bunch coriander leaves
        3-4 green chillies
        2 garlic flakes
        1 small piece ginger
        1 1/2 tsp red chilli powder
        1/2 tsp turmeric
        A pinch of hing
        1 tsp cumin seeds
        juice of a small lime
        Salt to taste

        Method:

        1-Take each fillet and dip it in the prepared mixture, so that it is well coated on both sides.
        2-Dust it with the rice flour.
        3-Deep fry in hot oil till the fish turns golden brown.
        4-Cooking time depends on the type of fish and you can usually tell by the color of the coating.
        Serve hot with rice and dal.

        Punjabi Fish Fry:-

        Cooking time : 20 Minutes

        Serves 2

        Ingredients:

        Fish 4 slices black pamphlet or seer fish
        Onion 1 nos large
        Ginger 2 tbspns chopped
        Garlic 5 flakes chopped
        Turmeric powder a pinch
        Yogurt 2 tbspns
        Kashmiri red chilly powder 1/2 tbspn
        Dry mango powder 1 tspn
        Refined oil 3 tbspns
        Garam masala powder 1 tspn
        Salt use as required
        Lime 1 nos cut into wedges
        Onions 1 nos medium size, cut into roundels

        Method:

        1.Grind the onions, ginger, garlic, turmeric powder, Kashmir red chilly powder, garam masala powder and mango powder along with the salt in a blender. (add a little water to obtain a paste like consistency.)
        2. Apply the ground ingredients on the fish slices along with the yoghurt and keep aside for 3 hours.
        3.Heat the oil in a tawa, add the fish slices and shallow fry on both sides over a medium flame till the fish is cooked and light brown in colour .
        4. Serve hot with the lemon wedges and onion rings.
        Note: the marination time of the fish is not included in the cook time.

        Fish Boti:-

        Cooking time : 30 minutes

        Serves 4

        Ingredients:

        Fish (Machhli) finger 1 kilogram
        Ginger Powder paste 1/2 teaspoon
        Garlic Powder paste 1/2 teaspoon
        Black Pepper Powder powder 1/2 teaspoon
        Chilli Powder powder 1/2 teaspoon
        Garam Masala powder 1/4 teaspoon
        Iodized Salt 1/2 teaspoon
        Lemon (Neembu) juice 1/4 cup
        Chat Masala Powder 2 teaspoon
        Oil (Tayl) 2 tablespoon

        Method:

        1-Mix all the ingredients and marinade for 1 hour.
        2-Put the meat on skewers and Bar.B.Q. on coal, occasionally basting the fish with oil.

        Chutney Fish Tikka:-

        Ingredients
        500g fish pieces of any type
        150g oil
        8g ajwain seeds
        45 ml cream
        10g cumin seeds powder
        10g garam masala
        20g garlic paste
        20g besan flour
        30 ml lemon juice
        5 tbsp mint or coriander chutney
        1/2 tsp white pepper powder
        1 onion, chopped in circles.
        60g yogurt
        Salt to taste

        Method:
        1. Mix cream garlic paste, ajwain seeds, white pepper powder, cumin seeds powder, garam masala, lemon juice, salt, mint or coriander chutney, besan flour in yogurt.
        2. Add fish pieces to the above mixture and soak them for about 3 hours.
        3. Heat oil in a pan, fry fish pieces on both sides.
        4. Serve with onions, which are chopped in circles.

          Fish Kofta Curry:-

          Cooking time : 35-40Minutes

          Serves 6

          Ingredients:

          white fleshed fish - 1 kg
          Tomatoes - blanched & diced - 250 gms
          Beaten curd - 2 Tbl.sp
          Ginger - 1" piece
          Garlic - 6 flakes
          Cloves - 2
          Turmeric powder - 1/2 tsp
          Cinnamon bark - small piece
          Garam Masala powder - 1 tsp
          Cardamom - 2
          Onion - 1
          Mint leaves - a few
          Bread - soaked & squeezed dry - 1 slice
          Cumin seeds - 1 tsp
          Coriander seeds - 1 tsp
          Green chillies - 8
          Coriander leaves - small bunch
          Chilli powder - 1 tsp
          Oil - 3 Tbl.sp
          Oil to fry
          Salt to taste

          Method:

          1-Boil the fish and remove the bones nicely.
          Mince the small onion, 4 green chilies, mint, coriander leaves and blend with the fish along with bread, salt and Garam Masala Powder.
          Knead to a smooth mixture, form into small balls and deep fry to a golden brown colour.
          Drain and set aside.
          2-Pound together the remaining spices to a fine powder.
          Grind onion, ginger and garlic to a paste.
          Heat 3 table spoons of ghee and fry the ground paste to a golden brown colour.
          Put in spices and fry for a couple of seconds, then put in tomatoes and curd.
          Cook till the ghee floats to the top.
          3-Put in 2 cups of water, mix nicely and cook over a low fire till all the liquid dries.
          Mash to a smooth paste with the help of a wooden spoon and then pour in 2 more cups of water.
          Bring to a rolling boil, reduce heat and simmer gently for 5 minutes.
          Put in the fish balls and simmer for 5 more minutes.
          Serve hot garnished with coriander leaves.

          Fish Korma:-

          Cooking time : 35 minutes

          Serves 2-3

          Ingredients:

          Fish - 1 kg
          Curd - 1/2 cup
          Onion paste - 1/2 cup
          Ginger paste - 2 tsp
          Garlic paste - 1 tsp
          Coriander paste - 1 Tbl.sp
          Cardamom - 6
          Cinnamon - 1" 2 pieces
          Salt - 2 tsp
          Ghee (oil) - 3/4 cup
          Green chilli - 6
          Kewra - 2 Tbl.sp
          Sugar - 1 Tbl.sp
          Lemon juice - 1 Tbl.sp

          Method:

          1-Use large fish for korma. Do not cut the fish into too small pieces. Carp is great for Korma.
          2-Except for the green chilles and kewra, add all the rest of stuff into the cooking dish. Mix well.
          3-Heat covered in low heat. Turn over the fish once (be careful).
          4-When the water has almost dried up, add the green chilli and the kewra heat for another half hour in very low heat.
          5-When the oil begins to float on top, you are done.

          Fish Qeema:-

          Cooking time : 10 Minutes

          Serves 2-3

          Ingredients:

          Fish 2 cups use any fish preferably those with less bones.
          Curry leaves 1 sprig
          Mustard seeds 1 tspn
          Lime juice 1 tspn
          Grated coconut 2 tbspns
          Salt use as required
          Red chilly powder 1 tspn
          Coconut oil 1 tbspn
          Onions 2 nos finely chopped
          Garlic 3 flakes
          Ginger 1 tbspn chopped
          Tomato sauce 1tbspn

          Method:

          1. Boil the fish in a sauce pan with sufficient water.
          2. When the fish is cooked remove from the flame.
          3.Cool and shred the fish with the fingers after discarding the bones.
          4.Grind the garlic and the ginger to a fine paste. Keep aside.
          5.Heat the oil in a pan.
          6. Add the mustard seeds, when they crackle add the garlic ginger paste, curry leaves and the chopped onions and fry for 2 minutes over a medium flame.
          7. Add the red chilly powder, tomato sauce, salt and the fish.
          8. Fry for a few minutes till the fish is slightly brown in color.
          9. Sprinkle some lemon juice on top. Remove from the flame.
          10. Serve hot garnished with the grated coconut.

          Fish Biryani:-

          Cooking time : 40-50 Minutes

          Serves many

          Ingredients:

          450g rohu or any other firm white fish fillets
          12 cup vegetable oil
          1 level tsp cumin seeds
          12 level tsp mustard seeds
          1 garlic clove, skinned
          1 inch piece fresh ginger, peeled
          1 tsp ajowan (carum)
          3-4 green chilli
          12 level tsp ground turmeric
          1 tsp. Red chili powder
          Salt to taste
          8-10 green -cardamoms
          4 black cardamoms (bari Iliachi)
          6 cloves
          10 pieces of black pepper
          1 inch cinnamon stick
          2 bay leaves
          8-10 dried plum
          Oil or ghee
          6 pieces green chillies
          2 tbs. Coriander leave
          2-3of Yellow food color
          Method:

          1.Wash the fish and pat dry. Cut into 1 inch pieces. In a blender grind the garlic ginger and chillies to a fine paste. Mix the paste with salt, chilli powder and ajowan. Smear the fish pieces with spice paste. Set aside for at least 2 hours
          2. In the meantime heat the oil in a shallow frying pan, add the cumin and mustard seeds they should pop and splutter at once. Add the chopped onions and , stirring frequently, fry them to a rich golden colour. Add the chopped tomatoes, still stirring frequently, fry the onions for about 10 minutes until the tomatoes are reduced to a pulp. Add a little water, if necessary, to prevent the mixture from sticking to the bottom of the pan. Keep frying until the oil begins to separate.
          3. Add the fish and stir well to coat it with the tomato mixture. Reduec the heat to low, cover with a tight fitting lid and cook for 15 minutes until the fish is tender.
          Sprinkle with finely chopped coriander. Keep warm. 4.Soak the rice in water for half an hour. In another pan boil the rice with 2-3 tsp. of salt and plenty of water .when the rice are 34 cooked drain the water. Add 14 cup oil or butter and fluf with a fork to prevent the rice to stick each other. Keep rice to one side.
          5. In a large pan place 2 inch layer of rice at the bottom, then a layer of fish mixture and dried plums on top, repeating this until the fish and rice have been used up. sprinkle the coriander and mint leaves over the top layer of the rice Pour 12 cup water and seeds of cardamom over the rice. Do not stir. Mix the food color with a little water and sprinkle over the rice.
          6. cover with a tight fitting lid and allow to cook for 20 minutes until the rice are cooked.
          7. once the dish is cooked, leave it covered for a few minutes. then remove the lid, fluff up the rice with a fork.
          8. serve with Raita.

            Fish fillets:-

            Cooking Time: 30 minutes

            Serves 2-4

            Ingredients:

            6- 8 pcs. of Fish Fillets
            3/4 cup of Gram flour
            1 tbsp. Garlic paste
            1 tbsp. Ginger paste
            1 tsp. Ajwain( Carmon Seeds)
            1 tbsp. Red chili powder
            1 tbsp. Lemon juice
            1 beaten Egg
            1/2 cup of Curd (yogurt)
            Oil for deep frying
            Salt according to taste

            Method:

            1. Clean, wash and cut fish into one and a half inch size cubes. Apply salt, lime juice, Ginger Paste, Garlic Paste and red chili powder. Keep aside for 20 minutes.
            2. Make a batter of gram flour, Curd/Yogurt, egg, oregano, salt and water. Keep marinated fish pieces dipped in this batter for an hour.
            3. Heat oil in a Kadhai and deep fry the fish till golden brown and crisp.
            4. Serve hot sprinkled with chaat masala.

            Fish Kabab:-

            Cooking time : 30-35Minutes

            Serves 4-6

            Ingredients:

            1 kg. Fish (skinned and center bone removed)
            2 Lemons
            12 cup fresh coriander (finely chopped)
            4 Green chilies (finely chopped)
            1 tsp. White cumin (roasted and ground)
            1 tsp. Black pepper (ground)
            1/2 tsp. Red chili powder
            2 Egg (whipped)
            bread crumbs
            1 tbsp. Vinegar
            salt to taste
            oil for frying

            Method:

            1.Wash the fish pieces with salt and garlic. Then place the fish pieces on a hot griddle (tava) on low heat and sprinkle vinegar on them. When the water dries completely remove from heat and leave to cool.
            2. Add all the spices including the fresh coriander and green chilies, mix well to a fairly smooth consistency. Divide the mixture into equal pieces (about 18-20), making them into flat round shapes about 1/2 inch thick.
            3. Dip the fish kabobs first into the egg and then into the bread crumbs, and deep fry in hot oil. Drain on kitchen paper towel.
            4. Serve them hot.

            Fish rolls:-

            Cooking time : 25 Minutes

            Serves 4

            Ingredients:

            1/2 kg any fleshy fish
            3 potatoes, boiled and mashed
            1 level tsp turmeric
            1 tsp chilli powder
            1/2 tsp ground pepper
            juice of 1 lime
            2 tblsp fish stock
            1 egg, beaten well
            breadcrumbs
            oil for frying

            Method:

            1.Clean and boil the fish in lightly salted water. Remove bones (if any) and mash together with the potatoes, chilli powder, turmeric and pepper.
            2.Add enough lime juice and stock to moisten. Add salt if required.
            3.Form into oval rolls, dip in the egg then coat with breadcrumbs.
            4.Deep fry until golden.

            Cooking time : 35-40Minutes

            Serves 2-4

            Ingredients:

            500 g. fish fillets, hamour or any firm white fish
            1/2 cup soy sauce
            2 tsp. ajinomoto
            1 tsp pepper
            12 tsp. salt or to taste
            1 egg, beaten
            1 cup flour
            oil for frying
