Sweet and Sour Vegetables
Ingredients
1/3 cup carrots, sliced
1/2 onion, cut into 1/2 inch squares with layers separated
3 cloves garlic, finely chopped
1/2 capsicum, cut into 1/2 inch squares
3/4 cup cabbage, cut into 1/2 inch chunks
5-6 cauliflower florets, boiled
2 slices canned pineapple, chopped (reserve juice)
2 tbsp oil
For the sauce:
4 tbsp tomato ketchup
3 tbsp vinegar
3 tbsp soya sauce
2 tbsp reserved pineapple juice
3 tbsp sugar
300ml water or vegetable stock
salt and pepper to taste
2 tsp cornflour
Method
1. In a bowl mix all the ingredients for the sauce. You can taste and adjust seasoning before adding the cornflour. Stir.
2. Heat oil in a wok till smoking. Add garlic followed by onions, carrots, capsicum, cauliflower and cabbage. Stir fry few seconds.
3. Reduce heat a bit. Add the sauce ingredients. Bring to a boil and simmer till sauce thickens. Add the pineapple pieces and mix.
4. Serve hot with noodles or fried rice.
